Hope Bauer Cooks

The January 1974 issue of Afternoon TV had an article of recipes from Elissa Leedis – Hope Bauer. Apparently it was a regular feature to get recipes each month from soap actor “chef”.

1970s Recipes

I can’t say anything much about the recipes. They look like typical 1970s recipes and they might not even have been made by her, since often those type of recipes are just some recipes somebody in publicity put together, but since they ARE supposed to be Hope’s (Michelle’s first cousin) here they are recipes. Enjoy!

Lemony Butter Cookies

2 cups sifted flour

1 – 3/4 cups sugar

1 cup butter, softened

2 or 3 teaspoons grated lemon rind

2 large egg yolks

Combine all ingredients and work together using your hands, until the dough is thoroughly blended. Chill the dough for about 1 – 1/2 to 2 hours. Then, using a portion at a time, roll the dough on a very lightly floured breadboard to a thickness of 1/4 to 1/3 inch. Cut into any desired shape and place the cookies on a lightly buttered cookie sheet. Bake in a 325 degree oven about 15 minutes or until set and a pale butter color. Cool on racks. Makes about 18 to 24 cookies, depending on cookie size.

Brownie Bonbons

1 cup semisweet chocolate chips

1/3 cup butter or margarine

1/2 cup shifted flour

1/2 teaspoon baking powder

1/8 teaspoon salt

1/2 cup sugar

2 large eggs

1 teaspoon vanilla extract

3/4 cup slivered Brazil nuts or chopped filberts

Place chocolate chips and butter or margarine in the top of a double boiler, over hot water. Stir and heat until melted. Sift the flour with the baking powder and salt. Set aside. When the chocolate is melted, remove mixture from heat and blend with the sugar. Add the eggs, beating all the time to keep the eggs from coagulating. Stir in the vanilla, the flour mixture and nuts. Turn into well-buttered muffin pans, with cups that measure about 1 1/4 inches across and are slightly less than 1 inch deep. Bake in a 375 degree oven for 10 minutes. Cool in pans for 5 minutes before turning out. Makes 2 to 3 dozen.

Chocolate Chip Meringues

2 egg whites

1/8 teaspoon cream of tartar

pinch salt

3/4 cup sugar

1 teaspoon vanilla extract

3/4 cup semisweet chocolate bits

Cover a cookie sheet with unglazed paper. Beat egg whites until foamy throughout. Add cream of tartar ad salt and beat until peaks are formed. Add sugar gradually , continuing to beat until very stiff. Fold in the vanilla and the chocolate bits. Drop by teaspoonfuls onto the prepared cookie sheet. Bake in a 300 degree oven for 25 to 30 minutes. Makes about a dozen.
